Many already do with bank transfers. Pay by Bank keeps that habit but removes the typing: the customer picks their bank, approves in its app and returns to your site.
The payment shows as pending and updates automatically when the bank responds. You get a webhook either way — nothing to poll.
Customers of Sparkassen and Volksbanken can pay with Pay by Bank: they pick their bank at checkout and approve in its app.
